Ingredients:
- 200g dark chocolate (70% cocoa solids)
- 60ml coconut oil
- 3 large eggs
- 60g whey protein powder (chocolate flavor)
- 60g almond flour
- 30g unsweetened cocoa powder
- 60ml maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Instructions:
- Preheat your oven to 180°C (350°F) and line a square baking dish with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate and coconut oil together in short bursts, stirring until smooth. Let it cool slightly.
- In a separate mixing bowl, whisk the eggs until well beaten. Add the melted chocolate mixture, maple syrup (or honey), and vanilla extract. Mix until thoroughly combined.
- In another bowl, whisk together the whey protein powder, almond flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a thick, smooth batter forms.
- Pour the batter into the lined baking dish, spreading it evenly.
- Bake for approximately 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and let the brownies cool completely in the baking dish.
- Once cooled, carefully lift the brownies out of the dish using the parchment paper and transfer them to a cutting board.
